1 cup mashed very ripe banana (about 2–3 small bananas)
½ cup shredded apple (about 1 small apple)
¼ cup shredded carrot (about 1 small carrot)
¾ cup milk
¼ cup melted unsalted butter (slightly cooled)
1 large egg
1 teaspoon pure vanilla extract
1 cup whole wheat flour
½ cup rolled oats
1 teaspoon cinnamon
1 teaspoon baking powder
½ teaspoon baking soda

Instructions
Preheat your oven to 375°F and grease a mini muffin pan.
In a bowl, mix together mashed bananas, shredded apple, shredded carrot, milk, melted butter, egg, and vanilla extract until well blended.
In another bowl, combine whole wheat flour, rolled oats, cinnamon, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until just combined; avoid overmixing.
Fill the muffin cups with about 2 tablespoons of batter each.
Bake for 16-20 minutes or until a toothpick inserted in the center comes out clean.
