  • 1 cup apple cider, reduced to ¼ cup
  • ½ cup whole milk
  • ½ cup unsalted butter, softened (for buttercream)
  • 3 cups powdered sugar
  • ¼ cup reduced apple cider (for buttercream)
  • 1 tsp vanilla extract (for buttercream)
  • Pinch of salt (for buttercream)
  • ½ cup store-bought caramel sauce (for filling)
  • Pinch of flaky sea salt (optional for filling)

Instructions

  1. Reduce 1 cup of apple cider in a saucepan over medium heat until it thickens to ¼ cup. Let it cool.
  2. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  3. Mix flour, baking soda, baking powder, salt, and spices in one bowl; cream butter and brown sugar in another until fluffy.
  4. Add egg and vanilla to the butter mixture; then mix in the cooled cider.
  5. Gradually incorporate dry ingredients alternating with milk until just combined.
  6. Drop tablespoon-sized rounds onto prepared sheets and bake for 10-12 minutes until firm.
  7. For the buttercream: beat softened butter, gradually add powdered sugar, cooled cider reduction, vanilla, and salt until smooth.
  8. Assemble by pairing cookie halves, adding buttercream and caramel between them.
