  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 medium apples (peeled, cored, diced)
  • 1/3 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (180°C). Grease and line a 9 x 4 inch loaf tin with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a larger bowl, cream together butter and sugar until light. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. Gradually add half of the dry mix to the wet batter, followed by buttermilk; mix until combined. Fold in remaining flour mixture gently.
  5. In another bowl, toss diced apples with brown sugar and remaining cinnamon.
  6. Layer half of the batter in the prepared tin, sprinkle half of the apple mixture on top, then swirl gently. Repeat with remaining batter and apples.
  7. Bake for 55–65 minutes or until a toothpick inserted comes out clean. Cover with foil halfway through if needed to prevent browning.
  8. Cool in tin for about 10 minutes before transferring to a cooling rack to cool completely.
