  • 20 g rolled oats
  • 3 tart apples (peeled and sliced)
  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs (room temperature)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. For the crust: Crush biscoff cookies, mix with melted butter, and press into a springform pan.
  3. For the streusel topping: Combine melted butter, flour, brown sugar, and oats until crumbly.
  4. For the apple filling: Toss sliced apples with brown sugar and cinnamon.
  5. For the cheesecake filling: Beat cream cheese and sugar until smooth; add yogurt, eggs, and spices.
