  • 1/3 cup apple cider
  • 1/3 cup fresh apple, peeled and grated

Instructions

  1. Preheat your oven to 325°F (163°C). Line a 9 x 5 loaf pan with parchment paper.
  2. In a stand mixer, cream the unsalted butter, granulated sugar, and brown sugar until light and fluffy (about three minutes).
  3. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, ginger, and nutmeg.
  5. Gradually incorporate the dry ingredients into the butter mixture while alternating with apple cider.
  6. Gently fold in the grated fresh apple without overmixing.
  7. Pour the batter into the prepared loaf pan and bake for 55 to 60 minutes or until a toothpick comes out clean.
  8. Allow cooling in the pan for about fifteen minutes before transferring to a wire rack.
