  • 2 lb boneless skinless chicken thighs
  • 6 garlic cloves, thinly sliced
  • 1 piece ginger (3 inches), peeled and finely chopped
  • 1 bundle scallions (6 to 8 oz), divided into whites and greens
  • 4 tsp kosher salt
  • Freshly ground black or white pepper, to taste
  • 10 cups water
  • 8 oz dried ramen noodles or dried curly noodles
  • 1 cup carrot, cut into thin matchsticks
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tbsp toasted sesame oil

Instructions

  1. In a large pot, add water along with the boneless skinless chicken thighs. Bring to a boil over medium heat before reducing to low. Let simmer for about 15 minutes until cooked through.
  2. Remove chicken from pot, shred using two forks, and set aside. Add garlic, ginger, scallion whites, salt, and pepper to the broth. Simmer for another 5 minutes.
  3. Add noodles and matchstick carrots; cook according to package instructions until tender.
  4. Stir in black rice vinegar, soy sauce, toasted sesame oil, and return shredded chicken along with scallion greens; mix well.
  5. Serve hot in bowls with optional garnishes.
