Instructions

  4. Stir in rice until coated in oil; then add pigeon peas, chicken broth, cumin, oregano, salt, and pepper. Bring to a boil.
  5. Once boiling, reduce heat to low; cover tightly and simmer for about 25 minutes until rice is tender and liquid has absorbed.
