  • 2 tablespoons oil (vegetable or mustard oil)
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1.5 lbs beef chuck or stewing beef, cut into bite-sized pieces
  • 1 large tomato, pureed
  • 1 tablespoon tomato paste
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 cup beef broth or water
  • 1 tablespoon white vinegar or lemon juice
  • 1 teaspoon sugar (optional, balances acidity)
  • 2 tablespoons chopped fresh cilantro (for garnish)

Instructions

  1. Prepare the spice mix by combining ground coriander, cumin, turmeric, paprika, red chili powder, and garam masala in a small bowl. Set aside.
  2. Heat oil in a large deep pan over medium heat. Sauté chopped onions until golden brown (about 10 minutes).
  3. Add minced garlic, grated ginger, and optional dried red chilies; stir for about 1–2 minutes until fragrant.
  4. Increase heat to medium-high; add beef pieces and sear for about 5–7 minutes until browned.
  5. Sprinkle the spice mix over the beef; toast for about 30 seconds.
  6. Add pureed tomato, tomato paste, salt, black pepper, and vinegar; cook for about 5 minutes.
  7. Pour in broth or water; bring to a boil. Reduce heat to low and cover; simmer gently for 60–75 minutes.
  8. Taste and adjust seasoning as needed; garnish with chopped cilantro before serving.
