  • 1 lb chuck steak
  • 3 russet potatoes
  • 1/2 cup scallions (finely chopped)
  • 1/4 cup red bell pepper (diced)
  • 2 cups precooked corn meal (Harina PAN brand)
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 1/2 cup cilantro (finely chopped)
  • 1/4 cup Roma tomato (diced)
  • 1/4 cup white vinegar
  • Salt and pepper to taste (about 1/2 teaspoon salt and 1/8 teaspoon pepper)
  • 1/4 cup red onion (diced)
  • 3 garlic cloves (minced)
  • 2 Roma tomatoes (chopped)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Better than bouillon (chicken bouillon)
  • 1 tablespoon cornstarch

Instructions

  1. Boil the russet potatoes until tender. Once cooled, peel and mash.
  2. In a skillet over medium heat, cook the chopped steak until browned. Add onions, red bell pepper, garlic, cumin, paprika, salt, and pepper; sauté until soft.
  3. Mix in the mashed potatoes and chopped tomatoes; set aside to cool.
  4. In a mixing bowl, combine cornmeal with water, salt, chicken bouillon, cornstarch, and oil to form a smooth dough.
  5. Roll dough into balls and flatten into circles. Place filling in each circle and fold over to seal edges.
  6. Fry empanadas in hot oil until golden brown on both sides. Drain on paper towels before serving.
