Baba Ganoush is a delightful creamy dip made from roasted eggplants, tahini, and zesty lemon juice. This smoky Mediterranean favorite is not just a treat for the taste buds but also a nutritious option for gatherings or casual snacking.

Ingredients

  • 2 medium eggplants
  • ¼ cup tahini
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 2 garlic cloves
  • ½ teaspoon sea salt

Instructions

  1. Preheat the oven to 400°F. Wrap pierced eggplants in aluminum foil.
  2. Roast the wrapped eggplants on a baking sheet for 50 to 60 minutes until soft.
  3. Once cool, peel away the skin and strain the flesh to remove excess moisture.
  4. In a food processor, blend the strained eggplant flesh, tahini, lemon juice, olive oil, garlic, and sea salt until smooth.
  5. Transfer to a serving dish and garnish as desired before enjoying with pita bread or fresh veggies.
