  • 2 salmon fillets (150-180g each)
  • 1 tsp Cajun seasoning (or smoked paprika + chili powder)
  • Salt and black pepper, to taste
  • 3 tbsp olive oil
  • 2 cups baby potatoes, halved
  • 2 cloves garlic, minced
  • 1 bunch asparagus, trimmed
  • 1 cup shredded mozzarella (or Italian blend)
  • Chopped parsley

Instructions

  1. Preheat the oven to 400°F (200°C). Toss halved baby potatoes with olive oil, minced garlic, salt, pepper, and parsley. Spread on a baking tray in a single layer and roast for 25-30 minutes until golden.
  2. On another tray, place trimmed asparagus, drizzle with olive oil, season with salt and pepper, and bake for 12-15 minutes. Add shredded cheese during the last five minutes until melted.
  3. Rub salmon fillets with Cajun seasoning, salt, pepper, and olive oil. Bake for 12-15 minutes or pan-sear until cooked through.
  4. Serve by layering crispy potatoes, cheesy asparagus, and salmon on a plate. Garnish with fresh parsley.
