  • 8 chicken drumsticks
  • 500g potatoes, chopped into chunks
  • 300g carrots, cut into thick pieces
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt & pepper
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 200C (390F).
  2. Arrange chicken drumsticks, potatoes, and carrots in a roasting pan in a single layer.
  3. In a bowl, whisk together olive oil, minced garlic, oregano, thyme, paprika, salt, and pepper. Drizzle over chicken and veggies.
  4. Toss gently to combine and ensure everything is well coated.
  5. Roast for 45-50 minutes, turning vegetables halfway through for even cooking.
  6. Check that the chicken reaches an internal temperature of at least 75C (165F) before serving.
  7. Garnish with fresh parsley just before enjoying.
