  • 1.25 lbs ground turkey
  • 1/2 cup onion (diced)
  • 4 cloves garlic (minced)
  • 1/2 cup olives (sliced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1/2 cup fresh basil (chopped)
  • 1 cup bread crumbs (panko recommended)
  • 1 large egg
  • 3 tbsp olive oil
  • 2 tbsp oregano (dried)
  • 1.25 tsp salt
  • 3/4 tsp black pepper (freshly ground)
  • 1/4 tsp red pepper flakes
  • 1/4 cup pine nuts

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini in half lengthwise and scoop out the flesh, leaving a quarter-inch border to form boats.
  3. In a mixing bowl, combine ground turkey, diced onion, minced garlic, olives, sun-dried tomatoes, fresh basil, panko bread crumbs, egg, salt, black pepper, oregano, and red pepper flakes. Mix until well combined.
  4. Fill each zucchini half generously with the mixture and place in a baking dish.
  5. Drizzle olive oil over the stuffed zucchini boats and bake for about 40 minutes or until golden brown.
