  • ¾ cup sugar
  • ½ cup sour cream
  • ¼ cup softened butter
  • 1 egg
  • 1 cup very ripe bananas (about 2)
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1½ tbsp milk

Instructions

  1. Preheat oven to 375°F (190°C) and line an 8×8 baking dish with parchment paper.
  2. In a mixing bowl, beat together sugar, sour cream, softened butter, and egg until creamy. Stir in mashed bananas and vanilla extract.
  3. In another bowl, combine flour, baking soda, and salt. Gradually mix dry ingredients into the wet mixture until just combined.
  4. Spread batter evenly in the prepared pan and bake for 20-25 minutes until golden brown on top.
  5. For icing, melt remaining butter in a saucepan over medium heat until browned. Whisk in powdered sugar, vanilla extract, and milk until smooth.
