  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 2 medium potatoes, peeled and cubed
  • 4 cups beef broth
  • 1 cup apple vinegar (optional)
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tbsp Worcestershire sauce
  • Crusty bread rolls

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Add cubed beef and sear until browned on all sides (5-7 minutes). Remove and set aside.
  2. In the same pot, sauté diced onion and minced garlic until softened (3-4 minutes). Add carrots and potatoes, stirring to combine.
  3. Return browned beef to the pot along with any juices. Pour in beef broth and apple vinegar if using. Add bay leaf, dried thyme, and Worcestershire sauce; stir well.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until beef is tender.
  5. Meanwhile, prepare bread bowls by hollowing out crusty rolls.
  6. Once the stew is ready, ladle it into each hollowed bread bowl and serve warm.
