Beef Stir-Fry with Vegetables and Fried Rice is a quick, vibrant dish that brings together tender beef, fresh veggies, and fluffy fried rice in just 25 minutes. This recipe is perfect for busy weeknights or special occasions, delivering a punch of flavor and nutrition in every bite.

  • 200g beef sirloin or tenderloin, cut into cubes
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup snow peas
  • 1 onion, chopped
  • 1 tbsp soy sauce
  • 1 tsp garlic, minced
  • 1 tsp vegetable oil
  • Salt & pepper, to taste
  • 1 cup cooked rice (preferably day-old)
  • 1 cup finely diced carrots
  • 1 cup corn kernels
  • 1 egg, lightly beaten

Instructions

  1. Season the beef cubes with salt and pepper. Heat vegetable oil in a wok or skillet over high heat and sear the beef for about 2-3 minutes until browned but still tender. Remove the beef from the pan and set aside.
  2. In the same pan, add minced garlic and chopped onion. Add broccoli florets, sliced carrots, and snow peas. Stir-fry the mixture for about 3-4 minutes until vegetables are tender-crisp. Pour in soy sauce and toss everything well to combine.
  3. Heat vegetable oil in a separate pan over medium heat. Add finely diced carrots and corn; stir-fry for about 2 minutes. Push vegetables aside; pour in the beaten egg and scramble lightly until cooked through. Mix scrambled egg with vegetables then add cooked rice along with soy sauce; stir-fry together for another 3 minutes.
  4. Plate fried rice on one side of the dish, followed by stir-fried vegetables topped with beef cubes on the other side. Serve hot for an enjoyable meal!
