  • 1 center-cut beef tenderloin roast (4 to 4 ½ pounds, trimmed and tied)
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons avocado oil
  • 6 tablespoons softened butter
  • 6 garlic cloves (minced)
  • 1 teaspoon finely chopped fresh rosemary
  • 1 teaspoon finely chopped fresh thyme

Instructions

  1. Remove the beef tenderloin from the fridge and let it sit at room temperature for about 1 to 2 hours.
  2. Pat the beef dry with paper towels.
  3. Preheat your oven to 425°F (220°C).
  4. Season the beef generously with kosher salt and black pepper.
  5. Heat avocado oil in a cast-iron skillet over medium-high heat until shimmering, then sear the beef on all sides for about 10 minutes.
  6. In a bowl, mix together softened butter, minced garlic, rosemary, and thyme; spread over the top of the beef.
  7. Transfer the skillet to the preheated oven and roast for 15 to 20 minutes until desired doneness is reached.
  8. Let the roast rest for 10 to 15 minutes before slicing into thick pieces.
