  • 2/3 cup granulated sugar (133g)

  • 1 1/2 cups heavy cream (360g), chilled
  • 3036 ladyfingers
  • 1 1/2 cups strong black coffee, cooled
  • 2 tbsp cocoa powder for dusting

Instructions

  1. Brew the coffee and let it cool to room temperature.
  2. In a mixing bowl, whisk together egg yolks and sugar until pale and creamy.
  3. Gently fold in mascarpone cheese and vanilla extract until smooth.
  4. In another bowl, whip heavy cream to stiff peaks; then fold into the mascarpone mixture.
  5. Dip each ladyfinger in cooled coffee briefly and layer half in your serving dish.
