  • 2/3 cup light brown sugar
  • 1 tsp salt
  • 3 large eggs
  • 1/3 cup buttermilk – mix 1/3 cup whole milk + 1 tsp vinegar
  • 2 tsp instant coffee
  • 3/4 cup boiling water
  • 3 tbsp corn syrup
  • 1/3 cup cocoa powder
  • 1 cup powdered sugar
  • 1/4 tsp salt
  • 1 1/4 cup heavy cream, chilled

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, baking powder, baking soda, sugars, cocoa powder, and salt.
  3. In another bowl, combine eggs, oil, buttermilk mixture, sour cream, and instant coffee; mix until smooth.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined. Stir in boiling water carefully.
  5. Pour batter evenly into prepared pans and bake for about 30 minutes or until a toothpick comes out clean. Allow to cool before frosting.
  6. For the frosting: Melt dark chocolate and mix with cream cheese, cocoa powder, powdered sugar, and corn syrup until creamy. Fold in whipped heavy cream.
  7. Assemble by layering frosting between cake layers and covering the top and sides.
