  • 907g full-fat cream cheese
  • 200g granulated sugar
  • 4 large eggs
  • 120g sour cream
  • 80g heavy cream
  • 1 cup granulated sugar (for caramel sauce)
  • 70g unsalted butter (for caramel sauce)
  • 120g warmed heavy cream (for caramel sauce)
  • Salt and vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Crush Biscoff cookies and mix with melted butter; press into a springform pan.
  2. For the salted caramel, melt sugar in a saucepan until amber, then add sliced butter, warmed cream, vanilla, and salt. Stir well.
  3. Beat cream cheese until smooth; gradually add sugar, then eggs one at a time. Fold in sour cream, heavy cream, cornstarch, and cooled caramel.
