  • 5 oz mixed greens or baby spinach
  • 1 avocado, thinly sliced
  • 1 cup fresh blackberries
  • 1 small red onion, thinly sliced
  • 1 cup crumbled goat cheese or feta
  • 1 cup toasted pecans or walnuts
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey (or maple syrup)
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Prepare the vinaigrette by whisking together olive oil, lemon juice, honey (or maple syrup), Dijon mustard, salt, and pepper in a small bowl until emulsified.
  2. In a large bowl or serving platter, layer mixed greens as the base.
  3. Add thinly sliced avocado on top of the greens followed by scattered blackberries and red onion slices.
  4. Sprinkle crumbled goat cheese (or feta) and toasted nuts over the salad.
  5. Drizzle with vinaigrette just before serving and add freshly cracked black pepper to taste.
