  • 1 tablespoon espresso powder
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 4 ripe bananas
  • ½ cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 large egg (beaten)
  • 3 ounces semi-sweet chocolate

Instructions

  1. Melt the butter over low heat in a saucepan. Stir in the espresso powder until well combined.
  2. In a mixing bowl, mash the ripe bananas using a fork until mostly smooth.
  3. Combine melted butter and espresso mixture with mashed bananas, then add both sugars and beaten egg; mix well.
  4. Gradually fold in flour, baking soda, and salt until just mixed, avoiding overmixing.
  5. Gently fold in chopped chocolate.
  6. Pour batter into a greased loaf pan and bake at 375°F for about 40 minutes or until a toothpick comes out clean.
  7. Allow to cool before slicing.
