  • 4 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 onion (chopped)
  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • 4 cloves garlic (minced)
  • 2 cups red apple vinegar or beef broth
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat. Season short ribs with salt and pepper, browning them on all sides for about 3-4 minutes each. Remove and set aside.
  3. In the same pot, sauté chopped onion, carrots, and celery until softened, about 5-7 minutes. Add minced garlic and cook for an additional minute.
  4. Deglaze the pot with red apple vinegar, scraping up any browned bits. Stir in beef broth, tomato paste, thyme, and bay leaves; bring to a simmer.
  5. Return short ribs to the pot, cover tightly, and braise in the oven for about 3 hours or until tender.
  6. Serve hot with sauce drizzled over the top and garnish with fresh parsley.
