  • 1 teaspoon pure vanilla extract
  • 2 egg yolks
  • 45g sugar
  • 20g cornstarch
  • 20g softened butter
  • 250ml warm milk
  • 50ml heavy cream
  • 75g sugar
  • 7g instant yeast
  • 40g active starter
  • 3g salt
  • 165g all-purpose flour
  • 385g bread flour
  • 70g softened butter
  • 130g dark chocolate chips
  • 1 egg for brushing
  • 2 tablespoons sugar for syrup
  • 2 tablespoons boiling water

Instructions

  1. Prepare the Vanilla Cream: Heat milk with vanilla until simmering. In another bowl, whisk egg yolks and sugar until pale. Add cornstarch and mix well. Gradually incorporate hot milk into yolk mixture while whisking. Cook until thickened; stir in butter and chill.
  2. Make the Brioche Dough: Combine warm milk, cream, sugar, and yeast in a stand mixer. Add flours and salt; mix on low then medium speed while incorporating softened butter until smooth.
  3. Shape the Rolls: Roll dough into a rectangle; spread chilled vanilla cream and sprinkle chocolate chips. Fold and cut strips before twisting and rolling into spirals.
  4. Bake: Let rolls rise again on a baking tray before preheating oven to 200°C (392°F). Brush with egg wash and bake until golden brown.
