  • 3/4 cup chopped broccoli stems
  • 2 cups finely chopped broccoli florets
  • 1 cup chopped leek
  • 4 cloves garlic
  • 4 cups chicken or vegetable broth
  • 12 cups water
  • 1 tbsp mustard powder
  • Salt (to taste)
  • Pepper (to taste)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 cup dried orzo pasta
  • 8 oz sharp cheddar cheese (grated)
  • 1 cup heavy whipping cream
  • 57 slices turkey

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large pot, heat olive oil and butter over medium heat. Sauté chopped leek, broccoli stems, and potato for about 3 minutes. Add minced garlic, salt, pepper, and mustard powder; stir for another minute.
  3. Pour in chicken or vegetable broth and water (1-2 cups based on desired consistency). Bring to a bubble; simmer for about 10 minutes until vegetables soften.
  4. On a baking sheet, lay turkey slices and crisp in the oven for 10-12 minutes; set aside.
  5. Blend the soup until smooth using a blender or immersion blender; return to pot.
  6. Stir in dried orzo; cook while stirring frequently until tender.
  7. About five minutes later, add broccoli florets and heavy cream; cook until orzo is tender yet broccoli remains bright.
  8. Incorporate freshly grated cheddar cheese until melted.
