Ingredients

Scale
  • 1 cup cold unsalted butter
  • 2 â…” cups all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tablespoon apple cider vinegar
  • 3 cups sliced peaches
  • 3 cups quartered strawberries
  • ¼ cup granulated sugar
  • ¼ cup cornstarch
  • 1 tablespoon lemon juice
  • Optional: Turbinado sugar for topping

Instructions

  1. Prepare the brown butter crust: Melt the cold unsalted butter in a saucepan over medium heat, stirring until golden brown and nutty. Let cool slightly. In a bowl, combine flour and salt with browned butter until crumbly. Add water, vinegar, and whisked egg; mix until just combined. Chill the dough for at least 60 minutes.
  2. Make the filling: In another bowl, combine peaches, strawberries, sugar, cornstarch, lemon juice, zest, and salt. Fold gently to coat the fruits evenly.
  3. Assemble the pie: Preheat oven to 375°F (190°C). Roll out one dough disc and fit into a pie dish. Fill with fruit mixture and cover with second rolled dough disc or create lattice strips.
  4. Bake: Place on a baking sheet and bake for about 70 minutes until golden brown. Let cool before serving.
