  • 320 g dark brown sugar
  • 15 g baking powder
  • 1 teaspoon kosher salt
  • 1 tablespoon cinnamon
  • 2 teaspoons cardamom
  • 1 teaspoon ginger
  • 1 teaspoon allspice
  • 1 teaspoon nutmeg
  • 1 teaspoon cloves
  • 140 g unsalted butter (room temp)
  • 100 g neutral oil
  • 283 g whole milk (room temp)
  • 2 eggs (room temp)
  • 1 tablespoon vanilla extract
  • 227 g unsalted butter (room temp) for frosting
  • 12 oz cream cheese (cold) for frosting
  • 340 g powdered sugar (sifted) for frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, salt, and spices.
  3. In another bowl, cream room temperature butter and dark brown sugar until fluffy. Add oil, milk, eggs, and vanilla; mix until combined.
  4. Gradually add dry ingredients to wet mixture and mix on low speed until just combined.
  5. Divide batter between prepared pans and bake for about 35 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to a cooling rack.
  7. For frosting, beat room temperature butter and cold cream cheese until smooth; add sifted powdered sugar gradually.
  8. Once cakes are cool, frost between layers and around the outside of the cake.
