  • 1 large burrata ball (or 2 small)
  • 45 ripe plums, halved and pitted
  • ½ cup chopped pistachios
  • 23 sprigs fresh thyme, leaves only
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey (optional)
  • Sea salt and cracked black pepper for seasoning

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the halved plums cut-side up on a lined baking tray. Drizzle with olive oil and honey if desired.
  3. Roast in the oven for 20-25 minutes until soft and caramelized.
  4. Allow the plums to cool slightly before serving.
  5. On a serving plate, place the burrata in the center and surround it with the warm roasted plums.
  6. Sprinkle chopped pistachios and fresh thyme over the top, then drizzle with additional olive oil and season with sea salt and cracked black pepper.
  7. Serve immediately alongside toasted sourdough or artisan crackers.
