  • 2 Honeycrisp apples, cubed
  • Olive oil
  • 1/2 pound sweet Italian sausage
  • 2 fennel bulbs, sliced
  • 1 onion, sliced
  • 1 cup grated Gruyère cheese
  • Fresh sage leaves for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil.
  2. In a bowl, combine butternut squash and apples. Drizzle with olive oil and season with salt and pepper.
  3. Roast for about 35 minutes until tender.
  4. In a skillet, cook crumbled sausage until browned; set aside. Caramelize fennel and onion in the same skillet until golden brown.
  5. Combine roasted squash and apples with sausage and caramelized vegetables in a baking dish.
  6. Top with Gruyère cheese and broil until melted and golden.
  7. Garnish with fried or fresh sage leaves before serving.
