- 2 large boneless skinless chicken breasts
- 1 ½ cups chicken broth
- ¾ cup heavy cream (or half and half)
- 2 teaspoons Cajun seasoning
- 10 oz. Rotel diced tomatoes with green chilies
- Olive oil
- Fresh cilantro for garnish
- 1 tablespoon honey
- 2 teaspoons hot sauce
- 1 teaspoon brown sugar
- ½ teaspoon mustard powder
- ½ teaspoon oregano
- 1 pinch cayenne pepper
- 1 pinch red pepper flakes
- 3 tablespoons flour
- 3 tablespoons butter
- 3 cloves garlic (minced)
- Lime juice
- Lime wedges
- ¾ cup cheddar jack cheese (shredded)
- Season the chicken with Cajun seasoning and dredge in flour.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 5-7 minutes per side until golden brown; remove and set aside.
- In the same skillet, melt butter, sauté garlic, then stir in flour until lightly browned.
- Gradually whisk in chicken broth and cream until smooth. Add honey, hot sauce, spices, and diced tomatoes; bring to a simmer.
- Return chicken to the skillet and simmer for about 10 minutes until cooked through.
- Stir in lime juice and top with cheese until melted. Serve warm with rice or your choice of sides.
