  • 2 large boneless skinless chicken breasts
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream (or half and half)
  • 2 teaspoons Cajun seasoning
  • 10 oz. Rotel diced tomatoes with green chilies
  • Olive oil
  • Fresh cilantro for garnish
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • 1 teaspoon brown sugar
  • ½ teaspoon mustard powder
  • ½ teaspoon oregano
  • 1 pinch cayenne pepper
  • 1 pinch red pepper flakes
  • 3 tablespoons flour
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • Lime juice
  • Lime wedges
  • ¾ cup cheddar jack cheese (shredded)

Instructions

  1. Season the chicken with Cajun seasoning and dredge in flour.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5-7 minutes per side until golden brown; remove and set aside.
  3. In the same skillet, melt butter, sauté garlic, then stir in flour until lightly browned.
  4. Gradually whisk in chicken broth and cream until smooth. Add honey, hot sauce, spices, and diced tomatoes; bring to a simmer.
  5. Return chicken to the skillet and simmer for about 10 minutes until cooked through.
  6. Stir in lime juice and top with cheese until melted. Serve warm with rice or your choice of sides.
