  • 1 tbsp olive oil
  • 1 tbsp Cajun seasoning, plus extra to taste
  • 1 tsp garlic powder
  • Salt & black pepper, to taste
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 oz cream cheese, for extra creaminess
  • Chopped parsley for garnish

Instructions

  1. Cook the twisted pasta in salted boiling water until al dente. Drain and reserve about ½ cup of pasta water.
  2. Season sliced chicken with Cajun seasoning, garlic powder, salt, and pepper. In a skillet, heat olive oil over medium-high heat and cook chicken until golden brown (about 5-6 minutes). Transfer to a plate.
  3. In the same skillet, melt butter over medium heat; add minced garlic and cook until fragrant (about 1 minute). Pour in chicken broth and heavy cream, scraping browned bits from the pan.
  4. Lower heat and stir in cream cheese, mozzarella, and Parmesan until melted into a smooth sauce. Adjust consistency with reserved pasta water if needed.
  5. Return cooked pasta and chicken to the skillet; toss to coat well. Simmer for about 2 minutes before serving.
  6. Garnish with chopped parsley or extra mozzarella before serving.
