  • 2 tablespoons gochujang
  • 1 1/2 pounds cherry tomatoes or vine tomatoes (halved)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice apple vinegar
  • 1 cup vegetable stock
  • 1/2 cup full-fat coconut milk (plus extra for serving)
  • Assorted tender herbs (dill, mint, cilantro, scallions, for serving)
  • Chili crisp (for serving)

Instructions

  1. In a Dutch oven, heat olive oil over medium heat for about a minute.
  2. Add diced onion and sauté until softened (5-6 minutes), then stir in garlic and ginger.
  3. Mix in gochujang and cook for 5-6 minutes until it darkens slightly.
  4. Add halved tomatoes along with soy sauce and vinegar; cook until tomatoes burst (10-11 minutes).
  5. Pour in vegetable stock and bring to a simmer for another 8-10 minutes.
  6. Blend the mixture using an immersion blender until desired consistency is reached.
  7. Stir in coconut milk, taste, and adjust seasoning if necessary.
  8. Serve topped with fresh herbs and chili crisp.
