  • 12 cups cubed French bread
  • 3 pears, peeled and diced
  • 5 eggs
  • 2 cups milk
  • 1 cup heavy whipping cream
  • 2 tbsp ground cardamom
  • 2 tbsp brown sugar
  • ½ cup sugar
  • ½ tsp kosher salt
  • 10 cardamom pods
  • 1 ½ cups sugar (for syrup)
  • ¼ cup water
  • 6 tbsp butter
  • ¼ cup orange juice
  • zest of 1 orange
  • pinch ground cardamom
  • raw turbinado sugar (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a large baking dish.
  2. In a large bowl, combine the cubed French bread, diced pears, brown sugar, and 1 teaspoon of ground cardamom. Toss gently to coat all pieces evenly.
  3. In another bowl, whisk together the eggs, milk, heavy whipping cream, sugar, kosher salt, and remaining teaspoon of ground cardamom until smooth.
  4. Pour the egg mixture over the bread mixture. Stir well until all bread pieces are soaked. Let it sit for about 15 minutes.
  5. Transfer the mixture into the prepared baking dish. If desired, sprinkle raw turbinado sugar on top.
  6. Bake in preheated oven for about 60 minutes until golden brown on top and set in the center.
  7. While baking, combine sugar, water, cardamom pods, butter, orange juice, zest, kosher salt, and pinch of ground cardamom in a saucepan. Bring to a boil then simmer until syrupy.
  8. Let the bread pudding cool slightly before serving. Drizzle with warm cardamom syrup as desired.
