Cashew Clusters are a delightful treat that perfectly balances the rich flavors of caramel and chocolate with the satisfying crunch of cashews. Ingredients

  • 11 oz bag of caramels
  • 10 oz chocolate melting wafers (or 8 oz)
  • 1 tbsp heavy whipping cream
  • 8 oz cashews (about 2 small spoonfuls per cluster)
  • Sea salt (optional)

Instructions

  1. Prepare your workspace by laying parchment paper on a flat surface.
  2. Arrange 18 small piles of cashews, using about 2 small spoonfuls for each cluster, leaving space between them.
  3. Unwrap caramels and place them in a microwave-safe bowl. Add heavy whipping cream and microwave in 15-second intervals, stirring until fully melted.
  4. Spoon caramel over the cashews, allowing it to spread slightly as it cools. Let it sit for about 10 minutes.
  5. In another bowl, melt the chocolate wafers in the microwave using 30-second intervals, stirring until smooth.
  6. Pour melted chocolate over the caramel-covered cashews to coat each cluster well.
  7. If desired, sprinkle sea salt on top for added flavor.
  8. Cool the clusters in the fridge or at room temperature until they harden completely before serving.
