  • ¾ cup Dutch-processed cocoa powder
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs, room temperature
  • 1 yolk, room temperature
  • 1 tablespoon brewed coffee
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon hot water, plus more if needed
  • 2 blocks cream cheese, room temperature
  • ½ cup granulated sugar
  • 1 pinch salt
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch square baking pan by lining it with parchment paper.
  2. Melt butter and 1 cup of chocolate chips in a microwave-safe bowl, stirring until smooth. Whisk in cocoa powder, sugars, eggs, brewed coffee, and vanilla extract.
  3. Combine flour and salt into the brownie batter; reserve ½ cup of this mixture in a small bowl and stir in the remaining chocolate chips.
  4. Spread the main brownie batter into the prepared pan and bake for 20 minutes.
  5. Meanwhile, beat cream cheese, sugar, and salt until smooth; add eggs one at a time and then mix in vanilla.
  6. Pour cheesecake mixture over the par-baked brownies and dollop reserved brownie batter on top; swirl gently.
  7. Bake for an additional 30 minutes or until set around the edges but slightly wobbly in the center.
  8. Cool completely before slicing into squares.
