  • 1 lb boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 4 tbsp unsalted butter
  • 1 cup all-purpose flour
  • 3 cups whole milk
  • 8 oz Velveeta cheese
  • 4 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste

Instructions

  1. Cook rotini in salted boiling water until al dente (9-10 minutes). Drain and set aside.
  2. Season chicken with Cajun seasoning and other spices. Cook in olive oil over medium-high heat until golden brown (6-8 minutes). Remove from skillet.
  3. In the same skillet, melt butter and sauté minced garlic for 1 minute. Whisk in flour to create a roux, then gradually add milk while whisking until thickened (3-5 minutes).
  4. Lower heat and stir in Velveeta and cream cheese until smooth. Add mozzarella and Parmesan; mix until melted.
  5. Combine cooked rotini and chicken into the sauce; toss well to coat.
  6. Serve hot, garnished with fresh herbs if desired.
