  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 12 oz bowtie (farfalle) pasta
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • ½ teaspoon Cajun seasoning, for the sauce
  • Fresh chopped parsley, for garnish (optional)

Instructions

  1. 1. Cook the bowtie pasta in a large pot of salted boiling water until al dente (10-11 minutes). Reserve ½ cup of pasta water, drain, and set aside.
  2. 2. In a skillet, heat olive oil and butter over medium-high heat. Sear chicken pieces seasoned with Cajun seasoning and garlic powder until golden brown (8-10 minutes). Remove from skillet.
  3. 3. In the same skillet, melt additional butter, sauté minced garlic, then add heavy cream and milk. Stir until simmering.
  4. 4. Add Velveeta cheese and stir until melted; then mix in mozzarella and Parmesan cheeses until smooth.
