  • 2 oz mozzarella cheese, shredded (about 1/2 cup)
  • 1 oz Parmesan cheese, finely shredded (about 1/2 cup)

  • 1/4 teaspoon crushed red pepper flakes, plus more for serving
  • 2 tablespoons fresh basil, torn

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchinis in half lengthwise, score the flesh side in a crosshatch pattern, season with kosher salt, and let sit for 15 minutes.
  3. In a skillet over medium heat, combine garlic, red pepper flakes, and 2 tablespoons of olive oil; cook until fragrant (about 1-2 minutes) and transfer to a small bowl.
  4. Heat remaining olive oil in the same skillet and sear the zucchini halves flesh side down until golden brown (2-3 minutes). Transfer to a baking sheet.
