  • 2 cups white rice
  • 1 large onion
  • 2 cups low-sodium chicken broth
  • 2 cans cream of mushroom soup
  • 4 large bone-in, skin-on chicken thighs
  • Fresh thyme
  • 1 clove garlic, finely minced
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9"x13" baking dish with olive oil.
  2. In a large mixing bowl, combine rinsed rice, chopped onion, chicken broth, and cream of mushroom soup. Mix well and season with salt and pepper.
  3. Place chicken thighs skin-side up in the rice mixture. Brush with melted butter and sprinkle with thyme and garlic; season again.
  4. Cover tightly with aluminum foil and bake for 1 hour. Uncover and bake an additional 30 minutes until the rice is tender and chicken reaches an internal temperature of 165°F (75°C). Broil for a few minutes for a golden finish.
