  • 1/2 ripe avocado, mashed
  • 1/2 cup cooked shredded chicken (grilled or rotisserie)
  • 2 slices cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise or aioli (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter (for toasting)
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mash the avocado with lemon juice, salt, and pepper until smooth.
  2. Spread mayonnaise (if using) on one side of each bread slice. On the other side of one slice, layer the avocado mixture, followed by shredded chicken and cheese. Top with the second slice of bread (mayonnaise side facing out).
  3. Heat butter in a skillet over medium heat. Place the sandwich in the skillet and grill for about 3–4 minutes per side until golden brown and cheese is melted.
