  • 500g chicken breast, diced
  • 2 cups broccoli florets
  • 2 cups mushrooms, sliced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 cup jasmine or basmati rice
  • 2 cups water
  • Pinch of salt
  • 1 tsp cornstarch + 2 tbsp water (for slurry)
  • Chili flakes (optional)

Instructions

  1. Cook rice according to package instructions.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Sauté diced chicken until cooked through (5-7 minutes).
  3. Remove chicken from the pan; add sesame oil, onions, and garlic. Sauté until fragrant.
  4. Add broccoli and mushrooms; cook until tender-crisp.
  5. Return chicken to the pan; stir in soy sauce and optional chili flakes.
  6. Mix cornstarch with water to create a slurry; add to the skillet and simmer until thickened.
  7. Serve hot over rice.
