  • 1 lb boneless, skinless chicken breast
  • 2 cups shredded cabbage
  • 1 large julienned carrot
  • ½ batch chopped green onions
  • 2 minced garlic cloves
  • 12 oz uncooked chow mein noodles
  • 6 tbsp oyster sauce
  • 3 tbsp low-sodium soy sauce
  • 3 tbsp light sesame oil (not toasted)
  • ½ cup chicken broth
  • 1 tbsp cornstarch
  • 1 tbsp granulated sugar

Instructions

  1. In a small bowl, whisk together oyster sauce, sugar, sesame oil, soy sauce, chicken broth, and cornstarch until smooth.
  2. Cook chow mein noodles according to package instructions; drain and rinse with cold water.
  3. Heat oil in a large wok or skillet over medium-high heat. Cut chicken into bite-sized pieces and cook until golden brown (about 5–7 minutes). Remove from pan.
  4. Add remaining oil and sauté carrots, cabbage, and garlic for about 3–4 minutes until softened.
  5. Return chicken and noodles to the pan; pour the prepared sauce over everything. Stir well and cook for an additional 2 minutes until heated through.
  6. Garnish with chopped green onions before serving.
