  • 10 oz semi-sweet chocolate
  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside.
  2. Melt the butter and 6 oz of chopped chocolate in a microwave-safe bowl in intervals until smooth. Cool slightly.
  3. In a large bowl, whisk together granulated sugar, brown sugar, eggs, and vanilla until well combined. Stir in the melted chocolate mixture.
  4. Fold the dry ingredients into the wet mixture until just combined; don’t overmix.
  5. Chill the dough for several hours or overnight.
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Divide chilled dough into 12 portions, flatten slightly, place a chunk of chocolate in the center, and seal into balls.
  8. Bake cookies for 10-12 minutes until edges are set but centers remain soft.
  9. Cool on baking sheets for about 5 minutes before transferring to wire racks.
