  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour

  • 1 1/2 cups chocolate chips
  • 2 cups vegan marshmallow crème
  • 2 cups semi-sweet chocolate chips (for topping)
  • 2 tablespoons coconut oil or butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually mix into the wet mixture until just combined.
  5. Fold in chocolate chips and press the dough evenly into the prepared baking dish.
  6. Bake for about 20–25 minutes until golden brown; let cool completely.
  7. Spread the vegan marshmallow crème over the cooled cookie base.
  8. Melt the semi-sweet chocolate chips with coconut oil in intervals until smooth; pour over the marshmallow layer and spread evenly.
  9. Allow to set at room temperature or chill until firm before cutting into squares.
