  • 2 tablespoons freshly squeezed lime juice
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper (to taste)
  • 1/4 cup red onion (diced)
  • 3 green onions (diced)
  • 1/4 teaspoon chili powder
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Sriracha
  • 1 lime (medium size, freshly squeezed)
  • 1/2 bunch fresh cilantro (chopped)

Instructions

  1. In a mixing bowl, combine chicken with smoked paprika, chili powder, salt, pepper, olive oil, lime juice, and chopped cilantro. Toss to coat.
  2. Heat a skillet over medium-high heat and cook the marinated chicken for about 10 minutes until fully cooked.
  3. In another bowl, mix diced peaches, bell pepper, onion, green onions, cilantro, lime juice, chili powder, salt, and pepper to create the salsa.
  4. Prepare the crema by whisking together Greek yogurt, mayonnaise, Dijon mustard, Sriracha, lime juice, and cilantro until smooth.
