  • 1/2 cup melted unsalted brown butter
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tbsp pure vanilla extract
  • 1 1/2 cups cake flour
  • 1 1/2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 1/2 cup apple cider reduction
  • 4 oz cream cheese, at room temperature
  • 1 cup unsalted brown butter, softened
  • 3 1/2 cups powdered sugar
  • 2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 2 tbsp apple cider reduction (plus extra if desired)
  • Apple slices
  • Cinnamon sticks

Instructions

  1. Start by measuring all your ingredients accurately.
  2. In a saucepan over medium heat, melt the unsalted butter. Add diced apples, brown sugar, and ground cinnamon. Cook until apples are soft. In a small bowl, mix cornstarch with water and stir into the apple mixture until thickened. Remove from heat and let cool.
  3. Preheat your oven to 350°F (175°C). Line your muffin tin with cupcake liners.
  4. In a bowl, whisk together cake flour, baking powder, ground cinnamon, nutmeg, and kosher salt.
  5. In another bowl using a mixer, beat together melted unsalted brown butter with sugars until creamy. Add eggs one at a time followed by vanilla extract. Mix well.
  6. Gradually add dry ingredients to the wet mixture while alternating with apple cider. Mix until just combined.
  7. Spoon half of the batter into each cupcake liner. Add a spoonful of the cooled apple filling on top of each before covering with remaining batter.
  8. Bake in preheated oven for about 20-25 minutes or until a toothpick comes out clean. Let them cool completely on a wire rack.
  9. For frosting: Beat cream cheese until smooth. Gradually add softened unsalted brown butter then powdered sugar until creamy. Stir in ground cinnamon and vanilla extract along with apple cider reduction. Adjust consistency if needed.
  10. Once cupcakes are completely cool, frost generously with cream cheese frosting. Garnish with apple slices and cinnamon sticks if desired.
