  • 1 cup unsweetened almond or oat milk
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour (regular or gluten-free)
  • 1 cup rolled oats
  • â…“ cup light brown sugar (for cinnamon swirl)
  • 2 oz softened vegan cream cheese (for frosting)
  • 1 ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until smooth.
  3. In another bowl, mix the flour, oats, baking powder, baking soda, cinnamon, and salt.
  4. Combine wet and dry ingredients until just mixed; avoid overmixing.
  5. Pour half of the batter into the prepared loaf pan.
  6. In a separate bowl, mix melted butter, brown sugar, and cinnamon for the swirl; spread half over the batter.
  7. Layer the remaining batter and top with the rest of the swirl mixture.
  8. Bake for 50–60 minutes until a toothpick comes out clean.
  9. Cool completely before frosting with a mixture of powdered sugar, melted vegan butter, and softened cream cheese.
