  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix brown sugar, softened butter, and cinnamon for the filling.
  3. In a large bowl, combine all dry ingredients: all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. Cream the cubed cold butter and granulated sugar in a stand mixer until light and fluffy.
  5. Add eggs and vanilla extract; mix until well combined.
  6. Gradually incorporate the dry mixture into the wet mixture until just combined.
  7. Roll out the dough into a rectangle on a floured surface; spread filling evenly over the top.
  8. Roll up tightly from one edge and cut into 10–12 equal pieces.
  9. Bake for 9–11 minutes until lightly golden around the edges.
  10. Cool on a wire rack before frosting with cream cheese frosting.
