  • 1 yellow onion (diced)
  • 3 carrots (sliced)
  • 2 stalks celery (sliced)
  • 3 cloves garlic (minced)
  • 2 cups dry green lentils (sorted and rinsed)
  • 1 14.5 ounce can crushed tomatoes
  • 4 cups vegetable broth
  • 34 cups water
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Stir in sliced carrots and celery, cooking for another minute.
  3. Add minced garlic, tomato paste, Italian seasoning, paprika, cumin, bay leaves, and black pepper; sauté briefly.
  4. Incorporate rinsed lentils, crushed tomatoes, vegetable broth, and water; bring to a boil.
  5. Reduce heat to medium and simmer for 20-30 minutes until lentils are tender.
  6. Remove bay leaves; stir in lemon juice and season to taste.
  7. Serve warm with chopped parsley on top.
