  • 2.5 lbs beef chuck, cut into large chunks
  • 2 tablespoons coconut oil
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • Salt & black pepper to taste

Instructions

  1. In a heavy-bottomed pot, heat the coconut oil over medium heat. Sauté the onion until translucent, then add garlic and ginger until fragrant.
  2. Increase heat to medium-high; brown the beef in batches and set aside.
  3. Lower heat back to medium; stir in red curry paste and spices, cooking for about 2 minutes.
  4. Return the beef to the pot and add coconut milk and beef broth; mix well.
  5. Bring to a gentle simmer, cover partially, and cook on low heat for about 2 hours until the beef is tender.
  6. Adjust seasoning with salt and black pepper before serving hot.
